Apple and Cinnamon Oat Bars

Muesli

5 oz millet flakes
½ tbsp olive oil
½ tsp mixed spice
Approx 1/4 pint boiling water

Preheat oven to 180ºC, gas mark 4. Mix all ingredients except the water. Add water gradually until the mixture can be formed into a ball. Break off small pieces of mixture, roll into a ball and flatten with hand. Place on a baking tray and bake for 20 minutes until golden brown. For different flavours try adding different spices to the mixture. For example, 1 tbsp ground ginger or 1 tsp cumin seeds, cinnamon or nutmeg.
