350g haddock, cod, whiting or salmon fillet skinned and cubed
400g cooked brown rice
1 tbsp freshly chopped parsley
1 hard boiled egg, chopped
Pinch grated nutmeg
1 tbsp olive oil

Place olive oil and chopped fish in a frying pan and sweat over a very low heat, stirring occasionally until the fish is virtually cooked through. Add the rice and cook for a further 4 minutes. Add the remaining ingredients and cook for a further 2 minutes, stirring the mixture.
